No Bake Energy Balls

No-Bake Energy Balls

Ingredients:
2 cups rolled oats
1/2 cup cranberries
1/4 cup raw pumpkin seeds (pepitas)
1/4 cup raw sunflower seeds
1/4 cup cacao nibs
1 teaspoon cinnamon powder or one drop doTERRA Cinnamon EO
1/2 cup almond butter or peanut butter
1/3 cup agave nectar
1/4 cup brown rice syrup
1 teaspoon vanilla extract
Cocoa powder or shredded coconut to coat balls
Directions:
1. Combine oats, pumpkin and sunflower seeds, cacao nibs and cinnamon powder (If using Cinnamon Oil add later to the wet ingredients) in large bowel. Set aside.
2. In a different bowel, combine almond butter, agave nectar, brown rice syrup, and vanilla (Cinnamon Oil) until well mixed.
3. Pour wet mixture into dry ingredients and stir well.
4. Slightly moisten hands with water and roll dough into 1-inch balls. Coat balls in shredded coconut or cocoa powder (the will look like truffles!). Store in the fridge. If you can wait, they taste better the next day! You can also freeze and have it handy, they take 15 mins. to defrost!
NOTE: Making the balls is fun but can take some time. You can do this recipe in 10 mins. or less if you pour the mixture into a square dish (8×8)and press firmly with your fingers to settle it. Sprinkle with your choice of coating. Place it in freezer for 30 mins. and cut in bite size pieces or in shape of a bar. Or place in fridge for 1 hour and cut. ALSO, feel free to create your own version of it, mix and match ingredients, try different flavors: Raisins, nuts, other seeds, flax seeds, other nut butters,
honey, barley malt syrup, other coatings, use whatever you have or like!
